TPC potato soup
- Montreal potatoes, peeled and sliced
- Vegetable stock
- 2 onions (sliced)
- (winter) carrot/ in segments
- Salt/pepper
- Cream
- Olive oil
- Chervil (finely cut)
- Mustard
- Small segments of smoked salmon
Use a soup pan to softly fry the sliced onion in olive oil
Add the potatoes and carrots. Add the stock and just enough water to submerge the potatoes. Boil until all ingredients are well done. Mash the potatoes and carrots with a hand blender. Dilute the soup with some water if necessary. Add cream to taste. Add salt and pepper to taste. Add several teaspoons of mustard. Add the finely cut chervil. Allow the soup to simmer for a short while. Pour out the soup and finally add the small segments of salmon.
